Caesar Salad

Caesar Dressing:

  • 1 c raw cashews (soak in boiling water for 15 minutes & drain if you don’t have a high speed blender)

  • 1 c filtered water 

  • 3 cloves of garlic

  • 2 tbsp coconut aminos

  • 3 tbsp dulse flakes

  • Juice of 1.5 lemons

  • 8 kalamata olives (I love the organic ones from Trader Joe’s)

  • Handful of parsley, loosely chopped (1 cup)

  • 1 tsp maple syrup

  • Optional: 1 tbsp capers

  • s+p to taste 

Place everything in high speed blender & blend until incorporated. Taste & adjust seasonings to preference.


Assembly:

  • 1 head of romaine, chopped (about 6 cups)

  • ½ c toasted salted pine nuts (buy raw & just toast up in a pan)

  • Kalamata olives

  • More dulse flakes

  • Optional: cucumber & tomatoes

Place the romaine in a large bowl & pour on about 1 cup of the dressing. I like to cover the bowl & shake to mix. Then add the toppings as desired & toss. Plate & garnish with a bit more of the dulse, pine nuts, and chopped kalamatas.
