2-Minute Tahini Chocolate Chip Cookies

There’s something you should know about me: I’m a lazy mess pot. I’m always looking for a way to get things done faster & with less effort. And my indulgences are no different. I love me a good mug cake, but these babies take the cake (no pun intended). Clean ingredients, things I always have on hand, portion controlled, and we’re talking WARM cookies. In 2 minutes. Come on. Talk about instant gratification. And honestly, you cannot f*** this up. Even if they don’t turn out like these, they always end up delicious. I personally never measure (bc I’m lazy) and that yields a different result each time. Always. Delicious. I did check the measurements on this recipe though :) only for you. Give it a shot and send me your pics! Pairs perfectly with a glass of cold homemade hemp milk or hot tea.

One bowl, less than 2 minutes in the microwave, minimal cleanup, instant dessert. No refined sugar & no added oil! These babies are vegan, gluten -free, clean, @medicalmedium compliant, & @whole30 compliant.

The recipe:

Stir 1/4 c unsalted tahini (can also use sunbutter @traderjoes ) & 1/4 c coconut sugar in a small bowl. Add 1.5 tbsp homemade hemp milk (or any mylk) & splash of vanilla (alc-free @singingdogvanilla ) and stir. Add 1/4 c gluten free flour (I like to use half @traderjoes gf flour blend, 1/2 homemade gf oat flour), pinch of salt (Himalayan, add more if your nut butter is unsalted), & 1/4 tsp baking powder (alum-free, brand is Hain). Add more oat flour as needed. Should be able to roll into ping pong sized balls (makes 3-4 cookies). Add your chocolate chips of choice (I use 100% dark @montezumaschocs Absolute Black). Drop on a mic safe plate & push flat with a fork. Mic 1 min full power, then 1 more if needed. Let sit 1 min.
