Nasturtium Rice Paper Rolls

I like to think of food as equal parts art & medicine. Shopping around the farmer’s market is a beautiful way to find nourishing seasonal ingredients. Which is how I stumbled upon these bright nasturtium flowers. Not only are they the star of the show, but they also contain healing qualities. Packed with vitamin C for immunity, plus antibiotic & antimicrobial qualities. Not to mention that they contain the sun’s energy which makes them a high vibrational food! They taste a bit peppery with a subtle sweetness, which makes them a great addition to these rice paper rolls.

The Recipe: The rolls themselves are super easy. Lay the flowers petals down onto the soaked rice papers (bánh tráng) so that they show when rolled. Then just cut up some cucumber, mango, avocado, and purple bell pepper into long match sticks and place on top. Top with slivered almonds for a bit of crunch and roll ‘em up! Such a fun way to get a dose of bright tasting summer produce. According to Ayurveda, summer has the qualities of Pitta (heat) & Vata (dry) which is best balanced out with cooling watery foods like these.

They’re great on their own but if you’re all about a sauce, you can mix together a tbsp of tahini + some garlic coconut aminos. Enjoy!
