Fig Salad with Nectarine Vinaigrette

Temps may be droppin’ but the summer produce is still poppin’, people! This is one of my absolute favorite salads to enjoy the bounty of late summer produce. It comes from an Ayurvedic cleanse I did with RaMa a couple summers back. It’s layered with fresh fig quarters & tart blueberries, crisp red onion slices, and an unusual salad guest: banana. Don’t knock it til you try it.

The dressing is good enough to drink - but I will warn it has a substantial amount of olive oil & golden balsamic in it, so if you adhere to a stricter Medical Medium protocol, you can try swapping out with a reduced down orange juice based dressing. Either way will yield a thick sweet dressing with a little tart kick.

Serve the salad over greens or just as it is. It pairs well with these roasted cashew chèvre stuffed squash blossoms which will be popping up on my feed later this week! Would also pair beautifully with something like a sweet potato patty or avocado toast for brunch. 

The Recipe:

1c fresh figs, quartered
1/2 c fresh blueberries
1/4 c red onion. thinly sliced
1 ripe banana, cut on a bias
1 nectarine, without pit
1/4 golden balsamic vinegar
2 tsp raw honey
1 clove garlic
1/2 c extra virgin olive oil
salt & pepper

Blend everything from nectarine down on high until smooth. Toss with the remaining ingredients.
