Thai Broccoli “Peanut” Noodles

When you’re in the mood for Thai but can’t handle the wait. Whip this up in less than 10 minutes! Perfect for a fun weeknight dinner that you can whip up after work for just you or for the kiddos too. More good news: these are just as tasty cold for lunch the next day.

You might not have all the ingredients below already, but I do suggest you invest in them since they are all super versatile clean ingredients that I include in the majority of my recipes. Do so in pursuit of building a minimalist pantry that allows you to play with quality ingredients, and slowly you can shed those products you already have that don’t make you feel good.

takes 10-15 minutes

“Peanut” Sauce Recipe:

  • 1/3 c sunflower butter (I used the salted one from Trader Joe’s, but you may need to add salt if yours is unsalted)

  • 4 tbsp coconut aminos

  • 1 tbsp maple syrup

  • 2 tbsp garlic sauce (can sub plain coconut aminos & some minced garlic, but this sauce is bomb)

  • 2 tbsp rice wine vinegar (can sub lime juice)

  • 1 tsp toasted sesame oil (I use the one from TJ’s)

  • a dash or two of hot sauce

  • veggie broth (TJ’s hearty veggie broth), as needed to thin

  • salt & pepper

Whisk it up! Add the veggie broth until it becomes the consistency of pancake batter. Set aside.

Stir Fry:

  • Annie Chun’s Maifun Rice Noodles (1 packet from the box) 

  • 1 head of broccoli, broken into bitesize florets

  • 3 tbsp coconut aminos (preferably garlic coconut aminos

  • Avocado oil, about 1 tbsp

  • Sesame oil, about 1 tbsp

  • salt & pepper

  • garnish: cilantro, sesame seeds, lime wedges, green onion

Bring salted water to a boil over high heat, drop in the broccoli florets & cook for about 2 minutes until tender. Strain out the broccoli & let sit. Bring the water back to a boil, drop in the noodles & cook for 2 minutes. Strain. 

Heat about the avocado oil & sesame oil in a large skillet/wok over medium high. Add the broccoli & the noodles along with about 3 tbsp coconut aminos. Stir fry for about 4 minutes until lightly browned.

Add the “peanut” sauce to the stir fry & stir until combined. Garnish with cilantro, sesame seeds, lime juice, and diced green onions.
